A given Gimbal organization can have a maximum of 10 different UUIDs.
Although you are restricted to 10 unique UUIDs, you may create up to 65535 unique major IDs and 65535 unique minor IDs. This gives you the flexibility to group beacons according to functional or spatial requirements, while staying within the limit. If need be, you can also create additional organizations to allow for additional UUIDs though this is not recommended (nor needed)
Remember that Gimbal that by using the Gimbal SDK, you don't have to reconfigure your beacons as each beacon is uniquely identifiable straight from the factory.
More information about iBeacon UUID/Major/Minor best-practices can be found in Apple's documentation here.
